My name is Ashley. I started beekeeping in Spring 2021 after taking online courses, visiting local hives for practice inspections, finding a local mentor, and studying for my Ph.D. I became a certified beekeeper in Georgia in Spring 2022.
What does "wildflower" mean in wildflower honey? Basically that the bees "go where they will" (about a 3 mile radius from the hive) and collect whatever pollen and flower nectar they find. If a honey jar says "almond blossom" or "orange blossom" it means the bees were likely at an orchard and used to pollinate fruit or nut trees, which can be hundreds of acres.
What does "raw" mean in raw wildflower honey? It means that while potential leaves or bee parts or wax are filtered from the honey before it goes into the jar, no other processing is used like heating the honey. There are no fine filters that remove any pollen or proteins that are naturally found in honey. There are no additives like high fructose corn syrup, agave, white sugar, etc. that are added to the honey. It is raw.
Why did my honey crystalize? Because raw honey has pollen in it and other proteins, it can form sugar crystals. The honey is 100% fine to eat, but if you want it to be smooth again, simply put the bottle in some warm water and let it warm up, giving the honey a stir every so often.
